Rainbow Cupcakes


Hey Everyone,

I am not a baker! Alas, I can only bake very basic things. 

Recently I found out, from a friend how to do that rainbow, mixed colour effect thing. Seriously easy! So I adapted it to my usual cupcake recipe. 

The kids loved it - L.O.V.E.D!!!


My go to recipe - I substitute the butter with margarine and it's just as good.

Butter Cake  
(Edmonds Cookbook)

150g butter, softened
1teaspoon vanilla essence
3/4 cup sugar
2 eggs
1 1/2 cups standard flour
3 teaspoons baking powder
3/4 cup of milk

Cream butter, vanilla and sugar until light and fluffy.
Add eggs one at a time, beating well after each addition.
Sift flour and baking powder together.
Fold into creamed mixture.
Add milk to give a soft dropping consistency.

Bake at 180 degrees C (356 F) for approx 35-40 mins for a cake or 12-15 mins for cupcakes - or until cake springs back when lightly touched

 Once the batter has been made, divide it up into bowls and add a different food colouring to each.

When spooning batter into the liners, add layers of colour.
Bake and be amazed.

So cool!!!


I can't wait to make them again.
 I am not really a fan of baking, but these were so fun that I actually enjoyed making them!

 Remember the more food colouring you add to the batter, the brighter the cupcake
 Now I just need to work on my icing skills....hmmm

  1. Oh how cute and easy is that? I'd love to try one of those rainbow layer cakes but when you have to bake 7 different layers I lose interest - this looks like a much better idea.

    1. So easy!!! Only thing is you make a few extra dishes to wash. I think I may try "ombre" cupcakes this weekend. I'll have to do a girls and a boys version.
